Seth... I wouldn't describe it as smoky... some decent hints of smoke, yes... but not dominated. But the old Macallans were definetly stored in ex-Sherry Casks and that's the main flavor you get... dried fruits... very creamy... and very intensive notes of roasted malt... not sure if this is the influence of the cask or a general characteristic of this beer...

Had a half carbed sample pull from my Monolith RIS, 16.3%. Soooo good. Once carbed I will be bottling from the keg. This yeast is a beast though, I'm sure it wouldn't have had a problem naturally carbonating in the bottle.

Then my Saison Noire. Pretty good, needs tweaking to be great though. My first attempt. Needs a little more spiciness and a little less sweetness and body. Will be using French Saison yeast and a little peppercorn next time.

different when it was described as strong. It's still just beer after all. I like to describe it as I do with strong

then had a Hop Wallop to wrap up the evening. Wicked night of beer. This afternoon I picked up a 4-pack of

I'd heard it was good before. Saw they had it, and needed to try it. DAMN...I need MORE! :D

Yep. DAMN good stuff. Cannot get it here in Texas, but I will be having some next week when I go home to SC for the 4th.

I am having a Real Ale Lost Gold IPA. I stand firm that this is their best brew to date.

Another sample of my Monolith RIS, 16.3%. Dark Lord ain't got **** on this! Seriously, it's amazing - and I did not expect it to be this good (I feel like I've said this before here, but oh well). Bottling it up in about a week finally. I wish I had enough to share with everyone. I said I was only going to brew it once a year... I'm not sure about that now. I need to pair this with Camacho Triple Maduro (still never had it, but it seems fitting...).
