I would be offended if a Jew were to wish me - Happy Holidays or Merry Christmas. Why? They mean nothing to him. I would expect him to wish me the best of what he believes, and greet me with Happy Chanukah.
In the same way, when I expect Christians to wish me a Merry Christmas, it is not a way of pushing religion on them - it is wishing them the very best of what Christians believe to be true.
In the same way, I'd never expect a non-Christian to wish me a Merry Christmas or Happy Chanukah, but Happy Holidays or Season's Greetings.
Anyway, just some of my thoughts.

If I, a Jew, wished you a Merry Christmas, I would hope you would consider that I have taken the time to learn something about the sanctity of Christmas, and what it means to those of the Christian faith. Maybe that's just me, but I hope you would take it that way.
