The last of the Sumatran, still really good. I'll roast tonight for tomorrow, prolly a Kenyan.

New coffee! Kenya Nyeri AB Gatomboya :cf1 Roasted 13 hours ago to FC, drip, SO. I love the twang of a good Kenyan and this one has it. Reminds me of the twang in Cuban cigars :2 It's juicy and sweet, with a long citrus finish that is loaded with grapefruit. Really nice cup! So glad to be drinking something new :noon from SM
On a side note, it is an interesting challenge to drip brew a pot of coffee when it is this fresh. The bloom wants to rise right out of the coffee maker.

So I've come to the conclusion that I don't like Starbucks coffee. Had a few while out of town as its the only decent cup in Buenos Aires. And that's not saying much.

Found the order from GCBC on my doorstep when I got home from work this morning. I quickly opened the box and immediately fired up 12 oz of Ethopian Sidamo Natural to FC+. Gonna roast 12 oz more shortly. :tu
Pressed a pot of Monkey blend before church, was awful :confused: don't know if it was tap water, old beans, what, but it was bad.
Dripped a pot of Kenyan when we got home and it was very good. Not as good as yesterday, but very good.
The Kenyan, with 2 1/2, very nice!

New coffee! Costa Rica Chirripo Los Crestones - Finca Alaska :cf1 Roasted 12 hours ago to city+, drip, Silk. Really nice, smooth, sweet, a little mild. Dried fruits and chocolate, who could ask for more.

Wow, even better today after 36 hours from roasting.
So, what's everyone's take on optimum window of resting time after roasting? I find myself often roasting for the next day but thought if try to get ahead of the game a bit.
Varies from coffee to coffee. Some are rocking good at 12 hours, others seem to peak from 36 to 48. Bottom line is, you don't want it to get too old, a week at tops for me. Usually no more than 4-5 days.
I'm with Bob. I like to try them at all different stages of rest. They really change alot in the first 1-3 days. I like to roast enough that will last me about 5 days, 7 at the most. Also, some beans take a longer rest, better. Sumatra's do well with the 3 days of rest, where the Costa Ricans (to me) are better with 1-2 days of rest.
I usually roast (for myself) 4 different 1/4 lb batches and rotate through them each day during the week.
Broke my $20 Bodem Press this morning :mad:. Second one in about a year. The glass is so dang thin. It just tipped over (empty) and completely smashed on the counter.

I don't really try to think about resting times honestly. I roast about one 1/2lb batch a week and drink it every day until it's gone. So I get to see what it tastes like as it progresses over time. This Ethiopian just really blew me away with the flavor as i tend to gravitate towards the Colombian/Brazillian beans. And coming back from SA last week, I'm stuck on the liquid jet fuel they serve.

Monday thru Friday I use my press at work. We have a Heated and cooled Alhambra water jug here. The Hot water is the perfect temp.
On the weekends, I use my press at home and heat my water in the microwave.

I don't know. It makes about 2 big cups, I pour one in my cup and the other into my thermal carafe. I don't leave it in the press, I heard that will make over strong, bitter coffee. But it is a nice thick ceramic, I'm guessing it might hold the heat for a little while.

My F.P. can loose alot of heat during the brew time. I am thinking about making some sort of insulated box out of styrofoam to put it in while it brews, LOL.

Wow you got 10 pounds of roasted coffee? Sounds like you need to unload that quick as I doubt anybody could drink that much while it is still fresh.

Yeah, I sent him a PM about it. Invoice clearly shows the $7.00/lb price rather than the $11.15/lb price for roasted.
I'm sure it'll still be good coffee by the time I get around to it, but still, it's just the hassle of not roasting it myself and I might have gone perhaps a bit darker. It smells wonderful, but I might only get through 2# before it is no longer "fresh".

As mentioned above, he left me a VM within 30 minutes or so of me sending him an email from my invoice acknowledgment. Mistakes happen and while I'm bummed it happened, he's doing everything to take care of me and i wouldn't hesitate to order from him again in the future. :tu

You need to get a "gold" filter for your drip. Makes a world of difference. The test being, use the gold for a week, then use paper again. You will never go back to paper.

How long will green beans last before it starts to decline prior to roasting?

Finished my first cup of Negrita out of the French press and I'm thinking a 25# order is necessary. I've probably roasted 20 different greens (including Kona) and this is my best cup all year. :tu
Negrita is the BOMB!
Different theories on how long, and it does vary by bean. Cool dry conditions are best, 6 months to a year. Some say, vacuum packed and kept in the freezer will extend life.
Today I did the Costa Rican, in French press, and drip with a gold. Both are excellent, no discernible difference. And, this coffee seems to have improved with the extra rest (2 1/2 days), body increased, balance is better, nice sweetness.

I tried an Ethopian Yirgacheffe in my french press earlier in the week that was very good and I've roasted a couple batches of Sidama Natural this week. Great stuff.

did a co-roast of malabar and sumatra, to full city.really not fond of either alone,together they make beautiful music.........
Also roasted up some Peru, and some Yunnan {china} peaberry,the peru is almost smokey,the Yunnan is earthy and has a dry finish.both to city + roast........

Exactly my thoughts. The regular coffee is terrible, even McDonalds is better. But they do make some good specialty stuff.

The specialty stuff hides/masks the quality of the bean with other flavors.
Yup, load it up with sugar, flavors, foamed milk, whipped cream, and all that.

I received some fresh roasted Unclebeanz Negrita roasted the week before Xmas.
Generally speaking, I find the fresh roasts to be not nearly full-bodied enough for my tastes.
However, this coffee is da bomb. Rich and full-bodied. Much more suited to my tastes. Props to Duane (forgop) for sending some my way.
Oh. I almost forgot. 95% of the time I drink my coffee black. No cream. No sugar. No nothin'.

Hey Peter, so it's probably not the "fresh roasts" that you are finding not nearly Full-Bodied enough. You just like a darker roast level. Probably upwards of Full City +. More like Vienna or French roast.

You are probably right. But I have had darker roast levels that still seem light to me.

In my town they sell it in vacuum sealed bricks and the can. They used to sell it in almost brown paper bag material. That aroma leaking through the bag drove sales, but after a short while, that coffee was very stale. My family drank Bustelo all of the time. I grew up on it. Great memories.

Currently have eight types of coffee. From cafe Duran to green label geisha. Six methods to brew. Many say I make the best coffee in Panama. But I would not go that far. I make it with love. Not love of a profit.

One of the smallest villages in the Borena Hagermariam District is Kilenso Mokonissa. The village is home to 50 thousand people who grow this coffee using organic practices but currently lack organic certification. Usually this coffee is blended and sold under the name “Ardi”. After talking with our importer we had this lot separated and sorted. 40 bags of coffee were selected and put into grain pro bags at origin. The exporter decided to enter the coffee into the annual Ethiopia Taste Of Harvest Competition where it took 2nd place honors this year. We are excited and humbled to have the opportunity to roast and brew this coffee.

Yes, the sock! My In-laws retired in Costa Rica in a small town named Samra, which is located on the West coast on the Pacific ocean. My mother in-law used the sock too in preparing some very delicious Tico coffees during our three week stay at that period in time.
Since I'm the only coffee drinker in the family, I use a Melita One cupper with a #2 brown filter. Been doing so since 1984. In fact, I still make coffee from that original One cupper. When I want to drink something other than "black" coffee, I use the following recipe: 2 tsp of Turbinado sugar in a 10-12oz coffee cup, 4 tablespoons of Cafe Bustelo in the #2 filter, pour hot water gently into filter and fill the cup up about 50-60% with fresh coffee, stir until the Turbinado dissolves in the coffee, and pour in some half n half until almost about 1/3" from the top, stir gently and enjoy:dr
I really enjoy the marrying of the Bustelo, Turbinado, and Half n Half. The Turbinado lends a carmelized flavor to the combination:tu
One of these fine days, I'll have to get with the program and attempt to make some Cuban coffee...

Our cup today was Ecuador Gold Cup winner (Nogal/Benedicion). Red bourbon and typica beans. Awesome.

Usually it's "plain ole" but I have been enjoying Cafe Godiva Caramel Arabica for my noontime cup. I'd recommend it, however must warn it will make your kitchen smell like Willkie Wonkas' house... Not necessarily sweet if you drink it black, though.
Um, to me, flavored coffees are like flavored cigars. No more need be said. Well, they both smell pretty good, I guess ;)

You oughta seek out some fresh roast, just to find out what you are missing. Coffee is the most complex food on the planet. Properly prepared, it is an incredible experience. Not really expensive, when compared to the cost of a premium cigar, you can get a pound, for about the cost of 1 or 2.

New coffee! Yellow Maui Kaanapali :cf1 roasted yesterday to FC, drip, Silk. A very nice blend of dry and wet processed beans. Sweet, smooth, complex, chocolate and fruit. Great body, this one should improve with rest.

Proud to report I enjoyed the Ethiopia DP Yirga Cheffe Kochere Friday. Tried it black, then added just a little half and half. Mr B is right, this coffee is absolutely fantastic. I was very frugal with it, and was able to enjoy some again Saturday. The toffee and citrus notes were perfect. Paired Saturday's with a Hoyo de Monterray cigar since Mr B's cigars were stabilizing . I told the wife I needed to treat myself like this more often. I'll be looking for this blend... ! Two more blends to try. Boy education sure is delicious :tu

I thought of making Cuban Coffee as well but I am not a fan of that much sugar in anything.
Most Cubans use a Moka pot for this preperation and not machine made espresso.
The type I researched you put a ton of sugar into your cup, then ad a little moka espresso, stirring to make a thick mud.
Then top off with moka espresso and the mud creates a sweet and thick fake crema.
Came into the office this morning to make a nice cappuccino, went to the fringe and my milk was almost gone.
Somebody must have been using it for their own needs since I opened it yesterday and used exactly half so I would have enough for today.
I guess it's straight espresso today.

I love the grinder, but for my use, it does a less than desirable job for getting it coarse enough for cold brewing. The grounds are still just a bit too fine that it really plugs up the filter. It does great for the french press.
One of these days I'll get it dialed in on the grind needed for my Nespresso and Keurigs to use it for something other than the most coarse setting.

My MIL sent me a pound of Tanzanian peaberry coffee she bought from a charity event. I have never had it and wasn't sure how it would taste. The beans were real dry looking and on the smaller side. Glad I gave it a go. It was fantastic. just made the last of it yesterday.

Brazil Bobolink Brown. Following a 36hr rest after roasting, I had a cup earlier this morning while watching the rain, and now am enjoying another cup. This is really a good tasting coffee. However, maybe it is due to the fact that I'm also munching down some Krusteaz Honey Cornbread too:dr:cf1
Sounds like you have a nice blend Mark. What type of roast do you place on the beans?
I don't roast - they taste better green :r
I have a local place that has been roasting for years and so I get them from them - roasted and ready to go. They rarely last longer than 48 hrs post roast, so that helps...The Celebese is a darker roast and gets a nice oily sheen to them. The La Minita is a medium roast - I highly suggest trying them individually 1st - then together...:gary

SM's Monkey Blend, straight black thru a drip machine. Accidentally put one extra scoop of beans in the grinder. Hmm...I like it.

So after a few years of no coffee at all due to not wanting caffeine I had a wicked craving today. Stopped by my local roaster across the street and got a half pound of Swiss Water Process Decaf Viennese Roast.
Sweet lord have I missed this. Made a french press worth and am enjoying it as I speak. Sooooo good.
