I hear ya... If someone opened up a real coal fired pizza joint like Brooklyn and made their own mozzarella; they'd be rich! It's not difficult at all. Making Mozzarella is a piece of cake. Making the crust correct and consistent is an art, but can be done for sure. Upper Crust is has opened several places around Boston and they all suck. The crust is hardly "upper" and it's the same old crappy cheese. To charge $18 for a simple pizza goes against pizza as a food!
