This is one I have been using. You have to have your own Cajun spice
Dice up the links and chicken and cook them up in a skillet. Drain and set aside with the shrimp. Slice the vegetables up and cook in a little oil until tender adding some garlic and Cajun seasoning (and spicy peppers). By now the rice should have soaked up a lot of the chicken broth. Add the meat and veggies to the pot along with the tomato paste. Add more seasoning if you like. Stir often to get it all mixed up. When it looks like the the rice has absorbed most of the broth then it’s done. The last time I made this I needed to add more water at the end to get it just right. |
