Default Re: Breakfast...sous vide eggs, bacon, tomato confit...

I think I'd roast the tomatoes and peel the skins off just for pretty's sake, but it still looks out of this world.
Maybe some spinach in there to stretch the arugula?
Make this for me sometime, will ya, Keith?
Maybe some Hollandaise sauce, too.
