That is interesting. The good part would tasting after aging. The hard part would staying out of it! I may try this with a couple bottles of the Red Chimay, just for a few months or so.

I live in CA, we don't have basements or anything similar to a cellar. What would you guys recommend as a means of storage?

I got some 08 Chimay put away and some Founders Backwoods Bastard. I also plan on putting some favorite seasonal beers away not to age but to get be through till it comes around again. I forgot to stock up Ale Asylum Satisfaction Jackson this year. :mad:

I just keep mine in a bottom cabinet in the kitchen that is away from the stove and the air duct, it stays about 60-65 degrees. I would love to be cooler but it seems to be ok

I was not expecting something so rich!!!

This is a dark, thick, roasted stout!!! The flavor is off the hook!!!

The foam looks like a rich cappuccino and it lasts forever!!!

This puts other beers to shame!!!:dr

you guys on the west coast suck, you get everything that is great.

local shop finally got their shipments so i picked up a case of 120 min IPA, glissade, Bigfoot, konings quad, rochefort 8, arrogant bastard, double bastard and oaked arrogant bastard and a few other random stouts that i've never had.

This is a couple weeks old, but didn't get a chance to post it, and its actually two hauls that happened a couple days apart:

The one I'm most excited about is the Fantome, picking up all the non-New Glarus stuff at Total Wine we are at the checkout and I hear my wife behind say, "Fantome?" My ears perked up and I said, "What did you say?":D They only had a couple bottles and I asked the person at checkout why they weren't on the shelf? She said that when they only have a few bottles left of something they are not getting more of they put them up at checkout. So for all you Total wine beer buyers, be sure to look around the checkout area :tu
Fantome is a very small Belgian brewery that you almost never see here in the states (unless you're lucky). They don't really brew to any certain style, most are considered Saisons/Farmhouse Ales, but their beers are all very very unique.
The best part though, as a homebrewer, is the yeast at the bottom of the bottle. It will be harvested to brew my own saison. :banger

You basically pour the beer out carefully and try not to disturb the bottom of the bottle, leave as much as you can in the bottle before getting any of the yeast from the bottom into the glass, I err on the side of caution. Then you swirl around the remaining beer to get the yeast off the bottom that is stuck there. Have your small starter ready when you drink the beer.

You have to baby the starter, start small (pint or less) and clean (sanitized well, as always) and with low gravity starter wort (say below 1.030) and then build it up (add more starter wort when you see yeast activty for a while), and then build it up again until you get a useasble amount (for your 5gallon batch or whatever). I'd say it has worked nine times out of ten with various bottle conditioned beers, the failures may have been my fault or maybe there just wasn't any viable yeast in the bottle. But most of the time it works, just make sure it is a bottle conditioned beer and that the brewery doesn't pasteurize or filter and bottle with a different yeast strain than you want for your beer. :tu

Hope this covers it, hope I was specific enough, but I'm not very scientific with this stuff.....relatively speaking, it is brewing after all. :D Let me know if you have any other questions. :tu

Went to the new Whole Foods the other day in Dedham, MA. My understanding is this is their largest store in the USA. They have a great selection of beer & wine there. So, I picked up a 4-pack of the new Weyerbacher Double Simcoe and a 6-er of Bear Republic Racer 5.

I love beers that have Simcoe hops in them, but after drinking the Double Simcoe I can honestly say the saying "too much of a good thing" applies here. The Racer 5 was great though. Reminds me a lot of Dogfish 60 with a little less sweetness and a little more of a bitter finish.

Vic, sorry that's not working out. I think the whole "limited release" thing has gotten out of hand. Getting tickets so I can stand in line and buy beer just doesn't make for much fun in my book. Surly's "Darkness Day" here in Minneapolis is the same way. I'm sure they are great beers, but I'm not interested in wrestling in line to be one of the first 800 people (in Surly's case) so I can buy their beer. For Three Floyds' Dark Lord Day, tickets were $20 each. Buy tickets to stand in line to buy beer? Not for me.

I just picked up a 4-pack of Brooklyn Black Chocolate Stout. I'm enjoying a glass of it now. The first few sips I picked up on an awful metallic after taste. Future sips though were much more enjoyable. It's enjoyable but maybe a little too "burnt" tasting for my liking.

Not sure what temp you are drinking this at, but IMHO this beer needs to warm-up to be fully enjoyed.

Agreed! I drank that glass of beer pretty slowly and the warmer it got the better it tasted. By the end, I was definitely enjoying the beer. I wasn't blown away by it but it was good.

I got a bottle of this, all I kept seeing was the stout. I thought, "where are the other ones, aren't there supposed to be four different beers?" Then the beer store guy informed me they're rolling them out one at a time over the coming months. So more beer hauls ahead!

Anyone tried this yet? Good reviews for the most part on BA.
This ones going in the cellar for sure, need to buy more to drink and possibly cellar more if its excellent.

BX Beer Depot, you have to be a homebrewer to buy it though. ;s They require you to buy at least 10lbs of grain or extract, 3 ounces of hops, and a yeast packet to purchase this beer.

My local sold out of the Sierra before I could get any. Found an off the radar shop with a few cases while traveling. Wish I had the cash for more. First time I had seen the SSR, and had been looking for the John John for a while too. I love the whisky barrel aged beers. The 12oz is the last bottle from a six pack, that I am finishing as I type.

I saw some DFH Palo Santo but passed for a few other things. I also recently bought a bottle of Orval. It wasn't bad but I still prefer Westmalle double.:tu

I saw some DFH Palo Santo but passed for a few other things. I also recently bought a bottle of Orval. It wasn't bad but I still prefer Westmalle double.:tu

I like Orval every so often but its not my favorite either, I really bought this particular one for the yeast/Brett. I added the dreggs of a bottle to half a batch of Saison right before bottling and it turned into one of my favorite homebrewed beers (very different from the non-Orval'ed other half). I also have a couple bottles in the cellar (a couple years old I think -need to check them), they are supposed to change quite a bit with a couple years on them, some don't feel it's an improvement, but I want to try myself. I guess you get less hop flavor/aroma and it gets a little funkier/drier....not sure the 'drier' is possible though.

6 bottles of GI Nightstalker, and 1 bottle of Widmer Brothers Reserve Cherry Oak Dopplebock. This beer has been staring at me the last few times I went in the store like a kitten at the animal shelter. Figured I should rescue it.

Estrella Damm is actually a very old beer. Zane drank it on his three sheets trip to Spain. Glad you like it.

Yup it is good. It is 'new' to me, but it passed my will try it when I read it had been made since 1856 or some such. Simple rule for beer, made form more than 100 years? I'll drink it. :D

Sam Smith Imperial Stout is reallllllllly good stuff. Mmmm. specially if you get som older stuff that has been well maintained at a good temp. then it is amazaing (no, it is not a mispellen).

Wasn't going to buy it since it's about 8 months old, but at 8% we figured it might be okay. the beer guy said if I try it and don't like it, he'll give me my money back.:banger So I grabbed a case, gave it to me for $36.00 bucks, down from $8.00 per bomber......score!:banger

As long as you are using CO2 to push the beer and not a hand pump a keg will last a long time. Right now I have 10 of the 5 gallon homebrew kegs and 1 commercial keg in the fridge.

Earlier this week, I picked up a 6er of the Sam Adams Longshot pack. The coolest thing about this 6 pack is that the beers in it were developed by homebrewers. Longshot is a homebrewing contest Sam puts on every year and the three winning beers are brewed, bottled, and sold sold as 6 pack. They even put a picture of the homebrewer on the bottle's label. Is that cool or what?

The three beers this year are Lemon-Pepper Caesan, a Barley Wine, and an Old Ale. All three are pretty good beers, but I feel the Old Ale and Barley Wine beers are a little too similar of styles. It would be nicer if they had three beers that were a little more different. Last year's 6 pack had better variety with a Double IPA, Cranberry Wittbier, and a Traditional Boch.

A Saison - one of my favorite styles of beer. An IPA - something I drink often and enjoy. And a Brown Ale that I am told by the brewery is still carbonating so I will have to wait to enjoy that one.

I plan on doing reviews of all of these so keep a look out.

Picked up a 6 pack of Deschutes Twilight Ale, 3 bombers of Deschutes Black Butte Porter (for a seemingly amazing price), and a Yeti Oak Aged Chocolate Stout (which was promptly drank by my wife and I :D). Looking forward to trying both of the Deschutes.

Try the stores I mentioned above as well as Jax in Cumming. Also Sherlock's on Barrett Pkwy tends to have a great selection of sesonals but never seems to move them all so they tend to have a good "out of season" selection

No pics, but made a restocking trip today.

Four different variations of Great Divide's Yeti and a four pack of Dogfish Head's Aprihop. Love the Aprihop. To me it is a sweeter version of the 60 Minute. I also picked up a sixer of Dale's Pale Ale and a 4 pack each of Gordon and Gubna by Oskar Blues. Don't let the can fool ya. These are really good beers. I also grabbed a cube of PBR, because you can never have enough of the greatest cheap beer in the world.

Not sure if they are able to keep beers out of season, but Green's on Ponce would be another good starting point. Jax in Cumming is a very well stocked place as mentioned by Albert. Also, Giant, on North Druid Hills in the Toco Hills shopping center, keeps a pretty good selection on hand. I love that it is only a block from my place.

I really enjoyed it, however it totally killed my palette for the rest of the evening so next time it will either be the only beer I have or the last. But even as hoppy as it was it was extremely well balanced

Killed a couple good ones while back east visiting friends. The Brute was fantastic. Growlers included homebrew gueuze and the keg only release of Brooklyn's braggot. Also had a glass of Brooklyn's Black Ops and Sorachi Ace although those aren't technically my hauls since I did not buy them.

A 2006 BFM Abbaye De Saint Bon-Chien came home with me in my luggage. Quite a few others stayed back in NY in my parents basement to wait for their demise on my Christmas visit.

Just hit shelves here in GA this weekend so it may be around. Not sure how good beer availability is there but it sucked here until the last couple of years.

Yeah it sucks here, badly....I've literally drank about 75% of the available beers here. The other 25% aren't worth mentioning...high gravity that is. I don't drink anything that isn't 7%+

You're could be missing out then, a good brew isn't always high abv. High alcohol does tend to help with the complexity but isn't what makes craft beer good. I've had many a good brew under 7%. For example the Duck-Rabbit Milk Stout I drink frequently is only 5.7% but its a damn fine beer. I've seen you mention Rate Beer, they score it a 94. Sure most Imperial Stouts (my favorite) are higher, but my advice would not to go by abv alone but let taste dictate what you drink. With that said I do find myself gravitating (excuse the pun) towards higher abv beers but I will never limit my experience based on a alcohol content.

That's sums up pretty much how I feel. I'd RATHER drink higher ABV 7%+ but occasionally I'll dip into the lower ABV beers. Yeah Imperial stouts are always HIGH ABV, and are my favorite type of beer.

Better late then never, but you did miss my post where it said I do dip into the low gravity beers occasionally but I like the complexity of the high gravity brews. Just a preference, again though you have to factor in TN's HORRIBLE distribution. I drink the best of what is available to me....you can bet on that.

Low gravity beers with complexity include many Belgians & American craft beers brewed with Belgian ale yeast strains (seems to be a growing trend,) as well as your brown ale/porter/stout category beers. Try those if you get them in your area.

Has anyone had that Stone, DFH, Victory colab yet? I've heard decent things.

Cracked open one of the bottles of *****es brew...wow, the mouthfeel is amazing...very 'fluffy' for such a beer, I like. Don't regret the knee jerk three bottle grab at all...woops! :)
