Red is roe, green is hepatopancreas and is where the contaminants such as mercury are concentrated. I avoid this stuff although I ate a lot as a kid.

I always eat the green and red stuff. It's quite good on toast.

The only stuff we don't eat on lobster is the shell (inside or out) and the stomach.

Up in NS 2 weeks ago we had snow crab, lobster, scallops, 3 kinds of smoked salmon, oysters and chicken legs ... that was supper on day 1 HEHEHE.

Oh, but such yummy wads of mucous they are!!!

I eat everything....lobster meat in the tail, claws, legs, head, anything I can get to...shell, bring it on!

But I didn't know about the mercury being concentrated there, oops. The tamale is great to put on bread...now, I've had irresistable green goop and stuff that kinda grossed me out (especially at the beginning when I turned on to the stuff) but I'll eat it gladly. Please pass me yours.
