Default Mexi Theme....

So I was watching some food tv shows and though mmmmmm foood....

Anyways Picked up a can of pinto beans, can of cut up stewed tomatoes, cooked up a package of chorizo *mexican style* cup up the rest of the hot peppers I had from this summer, simmered for two hours, then served over some rice and ate with some chewy flour tortilla's. Bloody awesome I tell ya. No seasoning needed since you get a melody from the chorizo.

You should try cooking some Discada .

Ingredients: Ĺ lbs Chorizo
2 Ĺ lbs. Beef Ĺ cubes
Ĺ lbs. Bacon diced
2 Hot Links 1/8 rounds cut in half
1 Smoked Sausage 1/8 rounds cut in half
2 Beef Franks 1/8 rounds
3 Tomatoes Diced
5 Jalapenos Diced
Ĺ Onion Diced
Corn Oil
Beer

Seasoning: Salt
Black Pepper
Lemon Pepper
Lime Pepper
Garlic Powder
Onion Powder
Cumin
Paprika
Julio Seasoning
Canadian Steak Seasoning

Turn burner on high, put small amount of oil in disco, add chorizo and cook until it comes apart in small pieces. Move chorizo to the sides.

Cook bacon until it starts dripping fat, then move it to the sides.

Lower heat to medium and throw in a handful of onions, when onions start to golden move to sides.

Add deli meats, and cook about 2 min., then move it to the sides.

Lower heat to low, add the beef, some beer and the remaining vegetables, season and cook 8 min.

Mix all ingredients together and cook until done. Stirring occasionally.

Raise heat to medium to dry Discada.

Not familiar with Julio Seasoning, the canadian steak seasoning, is that the same as montreal steak seasoning?

Then the beef franks...hot dogs? And hot links... those mini hot dog / sausage things?

And the remaining beer...is that ingested while cooking by the chef?

Yes, that is what it looks like.

Donít know if you can get Julio Seasoning anywhere outside of west Texas, it can be made without it. Canadian Steak Seasoning should be available at any grocery store. Beef Franks = Hotdogs. Hot Links are bigger than hotdogs and should be available at any store. There are many different types of Hot Links; I prefer the ones with a red casing.

And the remaining beer and then some, is ingested while cooking.
