Trying to find my recipe. Basically cut the peppers in half from top to bottom. Scoop the cream cheese, cheddar cheese, fresh herbs, and bread crumbs on top and bake. That's about it, there is something else that I can't think of.
Those little guys are damn good. |

I use buttermilk and crushed tortilla chips to make a great coating.
Cut 'em in half lengthwise, scoop the seeds if you're so inclined. Boil them for a scant 2 minutes to just barely start to precook them a bit. (keeps 'em from being too crunchy and raw tasting after baking) Fill the halves with whatever mixture you like. (I mix 1/2 sharp cheddar and 1/2 cream cheese, along with some onion and garlic powder and a little chipotle powder.) Dip them in buttermilk, then roll lightly in flour (I actually like Soy flour, it's a little sweeter and nuttier) then back in the buttermilk and dredge them in crushed tortilla chips. Bake at 425 for about 6 minutes, then broil them for a minute or two until they're toasted a bit. The tortilla chip coating gives a really excellent crunchy texture. Yummers.
