Rabbit

Rabbit is tasty, but it's not a widely available in the market place as it should be. That wild rabbit should taste different (assume gamier and richer) than the supermarket rabbit.

Have you tried both side by side? I wonder if the species plays a role in all this as well?

We used to always pick off a few while dove or quail hunting. My dad made the rabbit the same way as veal picata w/ mushrooms and capers.
