Brazil Dattera Sweet Blue from ThetaRidge

I have a gallon of cold brew going at home and I FPd a cup this morning, it is a very good bean, glad I picked up 10lbs!

Sumatra Lintong Tano Batak

This stuff was weird to roast. For starters, the beans were large and a darker shade of green. The roast time seemed to be fairly long and I roasted into the start of 2nd crack shooting for FC+. Although I still have some chaff in the cracks, the beans are nearly black, very expanded and some have some chunks missing from them, as if it's closer to a French. Anyone have any experience with Sumatra? Is it normal for the beans to have a darker shade?

I had similar experiences with this bean. I couldn't get mine to 2nd crack in the hot air popper. First batch I did barely made any sound for first crack, just one big pop, then not much else.

How are you preparing the cold brew Shane?

I bought a couple things:
http://cdnroot.filtersfast.com/ProdImages/Mr-Coffee-GTF3-Coffee-Filter.jpg

http://img4-3.realsimple.timeinc.net/images/0811/oxo-pop-container_300.jpg

I put the ground coffee into the gallon container and fill about 3/4 up with water and stir.
I leave it sit in room temp for about 24 hours.
I pour it through the gold filter.
Then fill up the rest of the container with milk.
Add 6 heaping spoons of sugar.
Stir, pour over ice.

It seems to work out about 3:1 coffee to milk for me, although many recipes call for 50/50.
You can also use water to cut it instead of milk if desired.
You don't even need to add sugar, it is pretty damn sweet naturally.
Mine tastes comparable to Starbucks Frap in the bottle IMO, but mine is a shade darker.

Hey Shane, any idea how much coffee you are putting in?

Not really, I know the mark on my grinder. I played with it until it tasted just right. If I had a scale I would weigh it. Maybe next time I will measure it.

DO IT!!!

You will not be disappointed [U]at all[U]. I love mine. And trust me, the Behmor is the definition ofr simplicity. I doubt you will ever get your poppers back out again. I have 5 poppers, so I could rotate while others cooled. I used them for 2 years. Its probably the best way to learn your technique. However not having to stand over my poppers any more and being able to do 1/4 - 1 lb lots at a time is such a huge benefit. Plus the roast level is so much more consistant compared to having to do 6 different roasts to get a pound from the popper.
I am not slamming the popper guys at all. I was one for years. This is just to encourage any one who is thinking about moving it up to the next level.

First shot from this roast but not from the bag of greens.
You know what though I don't think this bean ever made a great tasting shot though.
I bet I am just used to the Peruvian I have been using and it is better for an espresso than this other stuff.
It made a good FP but not an espresso, I guess I should look for another bean since I don't really drink FP anymore.
Sucks because I have about 4 pounds of it left.

Appears to be especially blended for espresso. Prolly you should try a couple different roast profiles before giving up on it.

Yah, that is why I bought it in the beginning. I spoke to Thetta about what they would reccomend and they said they are just ditributers and wouldn't know about espresso. The description is what I went with though.

You make a valid point, I will try it roasted a bit more and see how it goes.

What machine does everybody use to roast?
I am looking to upgrade to something bigger & better.
I really do not want to spend $700-$1000 for a good grill drum.
Is the Behmor 1600 any good? Are the Hottops worth the extra money?

Also do you roast indoors?

I have been reading reviews and they all seem nice but I can't find any comparisons.

Shane, i have the Behmor. For me, it was a great investment. It can do up to 1lb batches, isn't that hard to clean, and has all the different roast temp curves and profiles that you can really custom roast anything you want.

I'd say I have 25-30 roasts on it now. The only complaint is the wire drum, if you want to call it a complaint. Even though the wire mesh has faily small squared holes, on small peaberry sized beans, you will have some fall through. Not really a big issue.

I do use mine in the basement. There is some smoke generated, but not too bad if you stay out of 2nd crack. Start going into that roast range and you'll get a lot of smoke production. Otherwise, the built in smoke suppression works fairly well. Your house will smell of roasted coffee though, which is to be expected.

One trick i read about on the Behmor forums is to do a quick 2 minute preroast of the beans. Just turn it on and after 2 minutes turn off, then setup your actual roast. This preheats teh unit and the beans a bit, but not enough to trip the built in thermocouple.

Mr B
03-04-2013, 12:11 PM
I have been using the Behmor 1600 for about a year now. I love it! I roast about 2-3 lbs per week for my friends and myself. It works great. It is not a "Set it and Forget it" roaster. You still need to watch carefully near the end and pay attention to your 1st Crack thru 2nd and stop where you like it. It has a nice cool down mode so you dont have to remove it from the roaster when thru roasting.
I Roast in the back yard all year (California :) ) or in the garage when raining.
It is a great investment for the home roaster.

I am leaning towards the Behmor for price but the Hottops are very ineresting.
The Hottops cool down is much faster than the Beymor, they both roast about the same amount however pricing is way different so I am thinking the Behmor is prolly better based on cost.
Thanks for your comments fellas, that will likely be my choice unless somebody has used both units and can justify the price difference.

Mr. B, what is the largest batch you can take into second crack?
Many of the reviews I watched said you really can't take more than 7-8ozs into second crack.

Bob, you mentioned doing a warm up cycle, I did hear about preheating the oven but not with the bean inside.
Interesting.

I also heard you should do a "self-clean" every 5 roasts, do you guys do this?

Figure why not preheat the beans as well. Give them a head start. I don't use the profiles as much. I go by sound. I listen for end of first crack and then go from there as to how dark I want it.

I do the self clean approx every 5 roasts or so. I also wipe down the inside with simple green before hand. The cleaning cycle burns off any SG residue and it's ready to go for the next batch.

Shane, if you dont mind a little chaf escaping, you can open the door on the Behmor and the cool down will take half as long. Another reason I roast outdoors.
I can get 3/4 lb into second crack very easily. Preheat the roaster for almost 2 minutes (if you go over this amount of time it will shut down for a short while, safty feature). Press 1LB option on P1 profile and add all the extra time you can. If you dont use an extension cord, you will not lose much power.
I dont take my beans much past 5-10 seconds into 2nd crack, ever. I just dont like the "burnt taste". I like the Fruit, the citrus, the coco, and the baking spice that gets burnt out of beans when taken deep into or past 2nd crack.
I follow the same cleaning regement as the other above. Simple Green too.
I do not preheat with the beans inside the unit. However, if you want to go deep into 2nd crack, that would probably be the way to do it.

Yah I wouldn't really go past the beginning of second crack, just wanted to make sure you could. I will likely be roasting in the garage, nice to know I can open the door without shutting the cool down off.

Behmor 1600. Love the unit, but you have to make sure you pick a roast setup that gives you enough time to get where you want. I did 13.3oz on a 1lb setting and still ran out of time. The unit will only allow you to add so much extra.

I do my roasting batches in 8 oz increments. I do that because not every thing I roast do I want roasted light :)

I've been doing 1lb batches, but with a 2 min pre warmup. Tried the 13.3oz batch size since I'd read on the Behmor forums of someone doing this, on the 1lb setting and it working well. No warmup. Won't do that again. I like having extra time left so I can cut the heat when I want. If there was one change I'd like on the Behmor, it would be a way to let it run as long as you want.

forgop
08-23-2013, 12:44 AM
I always roast 12 oz at a time and set for 1# and add the extra time up front. Unless the temp in my garage is rather cool, I never get to that 1:00 mark swearing whether I'm going to hit 2nd crack.

Mr B
08-23-2013, 10:01 AM
I always use more time too.
Roast 1/4 lb on 1/2 lb setting and anything larger than 6oz. on the 1 lb setting. I just set a timer for about 2-3 minutes before I know when 1st crack will start and then I just sit there and watch (listen) for when I want to stop it.
I never roast larger than 12oz even with a pre-heat. I like having pleanty of time to let it go if it needs it.
I never roast to French. Full City+ is my limit. Most of the time its around Full City.

These African beans have been surprising. I generally expect bright floral/fruit flavors. This special illuminated beans that are different from what I considered the norm for Africa. The one I roasted yesterday has been my favorite of this batch.

My favorite bean was one I roasted 3 years ago when I started. I don't have the name, but I don't know if it matters. The coffee tasted a bit like graham crackers. It was like having a donut with your coffee... without the donut!

For reference I use a Behmor to roast.

Roasted a batch of Colombian Supremo today in the Behmor. Did this one out in the garage, instead of the basement. Had to use a heavy duty extension cord, which may have robbed it of power. It was a 13.3oz batch, used P2, C and added a minute. It started first crack around 1:40 left. After cool down it still looked really light to me. I read once in the Behmor forum about double roasting. Figured what the heck. Cleaned it out, set back up and ran on P1, A for another 10:30. Color is nice and chocolate brown. Smells good. We'll see in a couple days.

I usually go with the 50/50 for my Mokha Java :tu

My last order was from Burman, 5lbs of Brazilian Bob-O-Link and 5lbs of Indonesian Balinese. I see both are currently out of stock, but they have other varieties of each of those.

The half pound of Columbiam Supreme they sent wasn't too bad either.

Burman's is a great source for green coffee. There's so many options; what do you normally drink? What will you be roasting them with?

I don't normally drink one kind. I usually get a sampler or randomly pick some.

Other than looking at my order history from last time, I couldn't tell ya what I had.

I normally order from them or Sweet Maria's.

Check out either of the Papau New Guinea coffees if you like a darker roast and chocolaty cup.
The Mexican Terruņo Nayarita is a great medium bodied coffee.
Guatemala Hue Hue is usually a good full bodied coffee, try their Guatemala Huehuetenango Finca Injertal or the La Esperanza.
And you can never go wrong with an Ethiopian Yirgacheffe

I blend about 90%of the time, usually a Sumatra or Monsooned Malabar with Central American and an African or Yemen. I roast separately and blend after. I like to drink my single origins on the weekends. My wife and I go through about 18-20oz./week.

I saved some of the Yemen and Ethiopian for SO in my Aeropress and blended the rest. The blend has a big, silky body with complex chocolate, caramel, nuts and a bit of citrus in the cup this morning. The Yemen needs to rest a couple more days before the berries will pop out on the top end. Fantastic cup of coffee to say the least. :noon

What rule or how much do you measure of coffee to grind per cup?

It depends on the method used to brew your coffee, however, the standard ratio of coffee to water is 1 gram of coffee to 17 grams of water. Here's a great chart to use that covers all units of measurement

Probably the best way to immerse yourself, is to simply purchase a sampler from one of the following:

Bodhi Leaf Trading (down this away in SoCal). You can use our coupon code of "cigar" for an extra 10% off your purchase:

http://www.bodhileafcoffee.com/collections/steves-favorites/products/steves-favorites

You get 5lbs (5 one pound bags) from different regions at their choosing for you.

There is also Sweet Maria's up in Northern California for a sampler purchase:

https://www.sweetmarias.com/product/green-coffee-sampler

You can choose a 4lb or 8lb sampler pack. They chose the green coffee beans and regions for you.

It's easy to get started and agree with Chainsaw's recommendation to check out Sweet Maria's. It's by far the best source for information on how to roast coffee at home. I started roasting with a stove top Wok, then a Whirley Pop, hot air poppers, Behmor, and now use a 1K Aillio Bullet. The link below will get you started in the right direction.

When you start roasting you will be able to get green beans from different countries to try and see what you like. I roast 1/2 pound at a time and usually twice a week switching between different coffees every couple of days. :2
