Took the wife out for a nice house salad with a freshly made bleu cheese dressing, a rare filet mignon with a side of garlic and herb sauteed mushrooms, and a glass of cabernet sauvignon (her - merlot).

Pizza rolls. Only because I spent the evening prepping for tomorrow's smoke. 30 chicken legs and 3 fattys. Two utilizing ground chicken breast in an experiment filled with ham and swiss cheese rolled in panko bread crumbs and the other mixed with terriyaki filled with ham and pineapple. The third was filled with diced green chilis, cheese, eggs, tater tots, onion, and mushrooms.

Tonight eh - tomorrow woot!

Last night, the wife and I went to a California Mexican (healthier Mexican food - no lard, etc....:r) restaurant. Enjoyed some fresh Guacamole, chips, salsa, chicken tacos on freshly made corn tortillas, rice and black beans. It was fresh and tasty. The margs were great too. :dr

Tonight the wife and I are having a variation of a slow-cooker recipe that we christened Tandori Taco Bowls.

1 small pork roast
1 can pinto beans, drained
1 can green chiles
Taco seasoning (I substitute curry for chili powder, hence tandori)

Place the pork roast in a crockpot. Season with taco seasoning (I coat the top of the roast almost as if I was doing a rub). Pour the pinto beans around the roast. Pour the chiles over top of the roast. Cook on low for about 7-8 hours. Remove the pork, pull it apart with 2 forks, then return it to the crockpot, stir everything together, and cook for an additional hour.
You can serve this over rice, or drape tortillas over an oven-safe bowl and bake to create taco bowls.
Top with cheese, lettuce, sour cream, salsa.

I just grilled some spicy thai chicken strips with mesquite chips in the smoke box. Turned out amazing. I used some Boveine rub that Smokin Gator sent me, then mixed some thai sauce with Blair's Ultra Death and basted the chicken right before pulling it off the grill.

Chicken breast pounded thin and stuffed with fresh spinach, mozzorella and goat cheese marinated in basil olive oil on the grill along with local squash and garlic bread. lasst but not least a 00 hoyo depute and now I am trying to decide what I will have for desert
Maybe some homemade blackberry compote with local honeycomb and cayenne pepper ice cream over white chocolate bread pudding.

I put a garlic/paprika/brown sugar rub on some tuna steaks and fried them up in olive oil. Tossed some asparagus in olive oil and garlic and threw them under the broiler for a side.

saturday I rubbed some babybacks and let em sit overnight. Sunday was a quick preparation of a tray of beans and then everything went in the smoker at 11. The (ex) father-in-law brought over some potato salad and some fresh corn-on-the-cob.

I ate till I was Thanksgiving full.

hickory smoked up some pork tenderloin slices sunday.. 3 hours to smoke and then smothered in bbq sauce and let it carmalize while on the smoker. Sorry no pics, you'll just have to take my word for it that tehy were finger licking good.

Kat and I went to a local bar and had widow maker Burger's with hand made rings. OMG it was worth the risk for both of us
a 1# Burger served with 4 slices of bacon 4 cheeses and a raw Spanish onion that could put a cigar out all on a 6 inch round bun. BURP,BURP finished it all

Tonight was an easy night as I have a cold :( Soft Taco's

7% ground chuck seasoned with garlic, Worcestershire, oregano, cracked black pepper, Pyro Salsa, and a large Dallop of sour Cream.

Topped with Smoked Chipotle Cheddar Cheese, sour cream, lettuce, tomato, and red onion.

I would have loved to enjoy a cigar with these tacos but with being sick it just wouldnt have been worth wasting the cigar.

Tempura-battered, flash-fried lobster tail served on a bed of garlic mashed potatoes, covered in hollandaise with drawn butter on the side with sautéed green beans. :D

My wife made a great stroganoff last night. We had some mushrooms left over, so I sauteed them up, then made a gravy with some milk, flour, and chicken stock. Butterflied a huge boneless chicken breast, and breaded with a mix of Italian breadcrumbs and parmesan, then baked. Served with some parmesan noodles on the side. Yum!
