Default Stuffed Pork Loin

This is a must try. Made it this weekend and everyone raved over it. I smoked mine on my Traeger.

3-4 pound boneless pork loin (not tender loin).
Slice 3/4 way down the middle (cut like a boat, ends will help hold stuff in roast).
Lightly rub inside with a dry BBQ Rub (I used Texas BBQ Rub Grand Champion).
Stuff with baby spinach, sun dried tomatoes, provalone cheese, cheddar cheese, slices of onions and bell pepper.
Tie roast together with butchers twine.
Light rub outside with more Rub.
Smoke on pit/oven at 225* for about 2 hours, until internal temp reaches 152-158* range.
Remove and let rest about 30 minutes.
