Default Butternut Squash and Turkey Chili

Saw a similar recipe using beef brisket. Didn't have that on hand, but did have some left over turkey from TDay. Whipped up a small pot for dinner. Great fall/winter meal.

1/2 butternut squash, peeled and cut into 1/2 cubes
1/2 large onion, chopped
3-4 garlic cloves, minced
2 slices bacon, chopped
15oz can chopped tomatoes
1c chicken stock
1.5 tbsp chili powder
1 tsp ground cumin
1/2 tsp Mexican oregano
Meat from one cooked turkey leg and wing, shredded and roughly chopped
Salt/pepper

Over med-low heat, render bacon until almost crispy. Add squash and onion, increase heat to med, sauté to carmelize veggies. Add garlic and sauté for 30 seconds more. Add tomatoes, stock, chili powder, cumin, oregano and turkey meat. Simmer until squash is tender. Add salt/pepper to taste. Enjoy!
