Last night was a double score!!!

I made Italian-style breaded chicken cutlets with garlic mashed taters and peas for me and the munchkins. The wife had a birthday dinner out with her sisters, so I got her 8 oz filet leftovers when she got home.

Double yum!

Until I finish the sack of tortillas, I have this every night. two corn tortillas crumbled with some cold taco meat,
add a few chunks of white mexi-cheese, then a few dollops of chipotle salsa, then bake em in the toaster oven for
about 7 minutes, then cover with another corn tortilla and slid'em back in for about 4 minutes.

If I was not a fat-ass, I would also flop on a dollop of sour cream, but this is the current state of sad affairs. So I eat them
"plain". They are plain good. They actually become quesadillas, I guess, with the addition of the top tortilla.
