I'd like to repeat the mayo trick.

Use good mayonnaise on the outside of the bread. Try Trader Joe's, or a hispanic brand.
It creates a great crispy crust on the outside.

Jalepenos are a little too spicey for me, but good idea on the pepperoncini's.. .that sounds good!! nice and mild!

There are tons of different "High End" grilled cheeses that are all great. I try and make something new everyone now and again.

But if it's just a plain old Grilled Cheese, I like to throw Oregano on it. Especially if there is tomato soup. It just adds a little extra.

I like 'em plain, with tomato, with mustard, or with port wine cheese on it. But always, a good time.

Some great sounding sandwiches that many of you produce....but, I'm pretty much down with the basic grilled cheese sandwich and in the winter, a nice bowl of either tomato or potato soup. About as fancy as I'll get with the sandwich is some pepper jack cheese instead of the standard American.
