Default Christmas Brunch

A friend sent me two fresh Maine lobster tails for my bday (12-14 oz each). So I decided to go with an old favorite, the lobster pie from the Maine Diner.

Such a simple yet delicious dish. They boil the lobsters but with tails I prefer to broil them as it's easier to time and they come out melt in your mouth good, nothing worse than lobster that has chew to it.



The mix is simple, Ritz crackers, butter, lemon and a little BAM!

Layer the lobster. I only used one tail, the other is going to be a giant lobster roll for lunch on my bday.



Cover with my crumb mixture then in the oven for about 15 minutes or until the top browns.



Finish with a little squeeze of lemon over the top then devour it like a starving man going down on a ham sandwich.
