Default English Toffee

1 cup butter
1 cup sugar
1/4 cup water
1/2 t vanilla
1 cup semi-sweet chocolate chips
1.5 cups roasted chopped pecans

Put first three ingredients in heavy sauce pot and heat on medium heat while stirring until it starts to boil. Then insert candy thermometer and let cook without stirring until it reaches 280-300 degrees fahrenheit. Pour in vanilla and stir then quickly pour over one cup of chopped pecans in a metal baking pan that has been lightly greased. Sprinkle chocolate chips over the top of toffee and let it melt so you can spread it evenly over the top. Finally sprinkle the last 1/2 cup of pecans and chill in your refrigerator.

Oh my, that looks delicious. English toffee is my wife's favorite. (I am rather fond of it too) I tried to make it once. Let's just say, I don't do that anymore.

I love it!!! My mom has been laying whole Hershey Bars across the Toffee while it is hot. They melt down perfectly and the taste is out of this world.
