As the utter newby that i was, Sweet Maria's was my encyclopedia that brought understanding of all that was happening as i roasted coffee in the first few months. Now my sense's of taste, smell and sight are able to produce cogent reactions to the vagaries of the coffee bean roast, but i still depend on Tom's roast level recommendations to guide me to the best conclusion.
