Default Mr B's Chili Recipe

Mr B’s - Chili Recipe

2 lbs. Beef Round, Bottom Beef Roast - diced
2 lbs. Ground Beef
1 chub Hot Italian Sausage
1 lb chopped & cooked Bacon (save 4T grease)
2 yellow onions - diced
4 cloves garlic - minced/crushed
5 lg. Jalapenos - diced, no seeds
2 Red Bell Pepper - diced
2/3 of 7 oz. can Chipotles in Adobo Sauce – diced (whole can for spicy)
Juice of 1 whole lime
Petite-cut, Canned Tomatoes:
2 cans regular (14.5oz)
1 can w/ jalapenos
1 can w/ roasted garlic
1 15oz. can of Tomato Sauce
2 6oz. cans of Tomato Paste
2 15oz cans kidney beans, drained & rinsed
1-2 15oz cans pinto beans, drained & rinsed
1/4 cup chili powder
2-3 Tbsp Smoked Paprika
1 Tbsp. Cumin
1/2 cup Masa Flour (make a thick paste w/ some water & 1/2 tsp. salt)
2 12oz. can of Coors – Regular

Instructions:
Dice up the Beef Round, brown in a pan w/ 1 yellow onion & 2 cloves garlic in 2 Tbsp. of bacon grease. Pour off remaining grease.
Do the same with the ground beef, sausage, 1 onion and 2 cloves garlic.
Put browned meat and onions into large pot.
Add all remaining ingredients to the big pot except Masa paste & lime juice.
Bring to a boil & Simmer for 2 hrs.
Add Masa paste as needed to thicken, add the lime juice.
Simmer for 1 more hour.
Makes about 5Qts

That sounds great. Looks a lot like mine. I add a couple of habaneros and more chili powder but the rest is about the same.
