As a Former home landscape type person....my about the grasses....

The grasses would complement roses; what problem you have there is that grasses tend to continue to grow and reseed themselves. That is why they are so huge around the base. take a spade and cut straight down through the root ball. Get rid of 3/4 of it or replant other places on property. You would still have plenty of room for Roses, grasses are drought tolerant, and still focus the eye toward the steps leading into the yard area.
Good landscaping (like cooking) is about contrasts of colors, shapes sizes, textures, etc.

As ever I may not be seeing it all and you might be dead set on getting rid of them.
