amazing ribs. let me tell you. Dry rubbed and sit for a day then grilled and basted in bbq for 3 hours.
friends coming over, Im lucky if I get one! Pics to come! proprietery Spices Sweet baby rays bbq Soak chickory chips in water for 4 hours, put on grill for that smoky flavor. grill till tender at about 250 degrees, takes about 3-4 hours. wee!

The importance of wood chips cannot be underestimated. Being a lifelong native of Texas, I can tell you. we take this sh*t very seriously. If you want to shake things up some time, try Mesquite instead of Hickory. although I think for ribs, Hickory is the wood of choice.
anyhow, I'm jealous!
