Cheese is one of the foods that are on the fence. Technically dairy is not paleo since Hunter Gatherers were not out milking mastodons, and a lot of people do loose the enzymes to properly digest dairy after about 4 years old, but others can eat it and not have issues. I've cut out most dairy just from not eating cereal and ice cream, but I will still eat cheese. I've started cold smoking my own cheese recently, and will have a couple pieces once a week or so, or have a slice on a hamburger patty when I grill them. I've also started eating berries with mascarpone and a dash of heavy whipping cream as a dessert one or two evenings a week.
