Well ... I've decided to do a traditional Puerto Rican holiday dinner. Given that it's the first time that I've done this myself, it's been a three-day process. Four main dishes, plus dessert:
- Arroz con gandules (rice with green pigeon peas)
- Habichuelas rosadas con arroz blanco (pink beans with white rice)
- Pasteles (green banana and root vegetable masa/cake stuffed with savory meat or veggie filling, wrapped in a green banana leaf, and boiled -- kind of resemble tamales except they're nothing like them. LoL!)
- Pernil (pork shoulder picnic cut with skin-on, stuffed and marinated with mashed up garlic, onion, etc., and slow roasted)
- Bizcocho de ron (rum cake with a rum glaze)

The pork is cooking right now (probably 3-4 hours left) and I'll do the rice and bean dishes closer to dinner time. I LOVE this kind of food!!!!!
