Expert Advice from a TOE here, Digital is the only way to go. I have yet to see an analog hygrometer that didn't look like it should come out of a cereal box...

Beads are certainly the way to go, and even though I never had to use silicone, I would heed Adam's wisdom and go food grade as I have heard others say the same thing also...
