Quebec city is amazing. If you have the means, stay in the old city at Ch. Frontenac:

While there head out to the Monmorency falls.
In Montreal, you should drop by Casa Habanos, which is close to McGill and the Art Museum. Expensive, but very nice cigar bar run by Habanos SA.
Montreal has incredible restaurants, but no trip there wold be complete without lunch at Reuben's on Rue St Catherine. (Incredible Montreal Smoked beef sandwiches).
Superb boutique hotel at the old port is Le StJames. For a special occasion the restaurant there, the ("XO") is comparable to Per Se in New York. (including in price!)
The Big Smoke is a typical modern city, but take in a Blue Jays game at the Rogers Arena - incredible venue. There is also a cigar factory that rolls Cuban tobacco on site - Frank Correnti - you can buy them direct form the torcedor!
Too bad the hockey season will over by then, because a visit to Bell Centre would have been something....
