I would also add

Fallout 3 Yes I'm a bit of a Bethesda fan
Metal Gear Solid
I would include all 4 of the Assassin's Creed Games
Red Dead Redemption
Castlevania: Lords of Shadow
Halo
Resident Evil (how did you guys miss this one!)
Tekken 3
GTA 3 (1st of the great open world games)
Tomb Raider
