I agree that Osaka is a great buffet sushi place and it is a great deal but if you want the best Dallas has to offer it is hard to beat Sushi Axiom or Tei Tei.
Nobu is also very good but extremely pricey. The place that I eat the most at is Blue Fish in North Dallas:
