Have any old racks with a grid pattern? That helps a bit when it gets warm. I've never had a cheese outright melt, but I have had some sink 1/4" into the grate and end up looking like a high...

Steve, looks good.

If you want more smoke out of it, try taking the foil out from under the cheese, arrange the cheese grate so it doesn't allow contact to the weber grate, and move the smoke...

Thanks Bob. That's about what I ended up doing. I'm not sure cold rolled would have made a difference for this application, so I went with 3/8" A36. $54 at the local metal supplier for a 22"x24"...
