Tonight was smoked brisket, smoked low and slow for 10hours. With 2 racks of ribs smoked for 4 hours. Sides were slow cooked green beans and spaghetti squash sauted in olive oil with garlic.

The biggest issue I've had with mine has been how long it takes to get to temp. Avg 35-40 minutes. I've heard that parafin starters are good as well.
