Re: What's in your smoker?

MMmm. Look great!
I was moving some stuff in a closet today and saw my rib rack and thought, "damn, I want some ribs!"

Re: What's in your smoker?

I picked up two, whole, boneless pork loins on a good sale this week. I cut the ends into large roasts and the centers into thick chops.

I've got one of the roasts in a brine now and plan to smoke...

Re: What's in your smoker?

It will be made again and pics will be taken for sure. I'll probably blow one up really big and frame it to hang above the couch in the livingroom. :D

Re: What's in your smoker?

My girlfriend really likes jalapeņo poppers so I made a fatty stuffed with pre-grilled jalapenos, cream cheese and cheddar cheese. Used a pound of Jimmy Dean sausage and wrapped it all in bacon. It....

Re: What's in your smoker?

Smoked a fatty on Saturday. Fresh, hot sausage stuffed with spinach, mushrooms, onion and cheese and wrapped in bacon. Made up about a dozen jalapeno poppers on the smoker, too.

Re: What's in your smoker?

I've been wanting to try some beef ribs but at the grocery store meat counter they always look like they're all bone. Might have to stop into Von Hanson's to get a rack to test out.

Re: What's in your smoker?

Got it on craig's list a couple years ago. It's the older style with the stainless steel table.

I have a dedicated smoker, but unless I'm cooking a bunch of food (like your awesome pics!) I use...

Re: What's in your smoker?

Made a 12-pound packer brisket on my Weber Performer on Saturday. Smoked with maple and a little mesquite. It was my best one yet!

Re: What's in your smoker?

Saturday I used some pulled pork I smoked a couple weeks ago and had in the freezer and made a pulled pork pizza on a stone on the Weber performer. It was awesome. A little bbq sauce, pulled pork,...

Re: What's in your smoker?

I smoked two, eight-pound pork butts on Friday with hickory and Plowboy's Rub. They turned out awesome. And now there's a bunch in the freezer for a "rainy day."

Re: What's in your smoker?

I'm going to try a hot-and-fast brisket tonight after work. Haven't done that method before. I've got an 11-pound packer ready to go, and had planned to do it all day tomorrow, but am liking the idea...

Re: What's in your smoker?

I never see them in the grocery store but have seen them a couple times at a Trader Joe's near me. Haven't bought one yet, but I may need to give one a try. They look awesome!

Re: What's in your smoker?

That was my plan, too. Right about 275 with butter and herbs/spices rubbed under the skin. It's just a bone-in breast, so I'm just going to use the Weber kettle with offset coals. Didn't want to mess...

Re: What's in your smoker?

If the rain holds off I'm going to try a turkey breast offset in the Weber performer tonight. I've done whole chickens before, but not a turkey breast. I've got some cherry wood chunks and Plowboy's...

Re: What's in your smoker?

I made a ground beef fatty stuffed with cheese, mushrooms and spinach on the Weber kettle. Along side that I added a pan of doctored-up beans with some leftover smoked rib trimmings, other spices,...

Re: What's in your smoker?

Did some spare ribs, armadillo eggs (http://www.mainstreetmeats.com/armadillo-eggs---a-great-bbq-snack!/) and ABTs on the cheap bullet smoker last weekend. First cook of the year.

But I've got 2...

Re: What's in your smoker?

I've used their plain crust (not the herbed or wheat) a couple of times and it was good. Crispy bottom and a nice chew when we used a pizza stone in the oven at 550.

Re: What's in your smoker?

I didn't fire up the smoker, but I did make some chicken drumsticks on the Weber kettle last night. A few with Plowboy's Yardbird rub and a few with Plowboy's Jerk rub. Added a little cherry wood to...

Re: What's in your smoker?

I bought a brisket on Saturday at Sams, and they did have whole packers (with the flat and the point) and packs with just the flat. I think the smallest whole brisket I saw where I shopped was about...

Re: What's in your smoker?

I've heard great things about the Plowboys stuff so I just bought a shaker of the Yardbird and a shaker of the Jerk seasoning. Been craving some Jerk wings!

Re: What's in your smoker?

I picked up a couple of corned beef brisket flats on sale to give pastrami a try after the snow melts and I can find my smoker.

Never tried it before, but I love the stuff.

Re: What's in your smoker?

No advice for your smoker - I use a cheap charcoal bullet smoker - but DEFINITELY make the ABTs. I use a similar recipe, but I mix in a little shredded cheddar with the cream cheese. And I do about...

Re: What's in your smoker?

<----- Jealous. I'm really tempted to shovel out my smoker in the back yard and pick up a couple of pork butts.

Re: What's in your smoker?

Thanks for the info.

I'd LOVE to get a WSM, but unfortunately it's not in the budget. I've been looking on Craig's list too for a used one, but haven't seen any posted.

I've modded my Brinkman...

Re: What's in your smoker?

Question for the more experienced smokers:

I've only been smoking since this past summer, with an inexpensive Brinkman charcoal smoker (the El Cheapo Brinkman model, as its referred to on some...
