I thought of doing that, but if I feel the need choke the heat more than the vents alone, I put a thick cast iron pan as the water pan if I am using one level.

I use the WSM as more an "oven"...

Did baby back's yesterday on WSM. Used both levels and did not insert the water pan. I find it much easier to use and clean without the pan! Charcoal lasts longer too.

4 rib single piece of short rib. Put on WSM with Joe Beef Montreal seasoning. No water pan with metal bowl under meat to catch fat. Ran it at 300ish. Came out great.

Did a 5.5 lb point cut brisket on Saturday. The rub was Hungarian paprika, garlic powder, rosemary, salt and Madeira wine. Meat sat for two days in seasoning before going on WSM.

I don't add broth when wrapping it and I serve when it hits near 200, but actually I go by tenderness when it the temp is above 185. Depends what the brisket is "telling me". Fork does not lie.

4.3 lb flat brisket went on early this morning. Finishing it in the oven, will turn off heat in 30 minutes for serving tonight.

I have an Icelandic lamb leg from Whole Foods. 2.6 lb and was like $6.99 a pound which I thought was good deal for lamb of that quality.

Put on WSM removing water pan using a shallow cast...

I would put in a pan at 185+ and just finish/bathe it in the sauce till 200.

I would recommend going as light as possible on smoke and avoid heavy seasoning. You want the beef to do the talking, not the smoke and spice.

I like your idea for separating the charcoal for offset smoking. Readers take notice for an inexpensive smoker idea for their Weber.

I put on two St. Louis racks and a 3.5 lb brisket this morning...

I trim them down so they look like NC style. I'll also cut off the smallest ribs so everything is square. There's plenty of uses for the extra meat. Great in Paella.
