Sounds like you are close… so try this…

Cook it uncovered until the internal hits 175. That is usually around 12 hours give or take. Then double foil and put in maybe 1/2 cup of beef broth instead...

Don't do one that is bigger than 12-14 pounds - any bigger and they just don't seem to smoke well.

In the southeast lots of BBQ joints use leftover meat to make Brunswick Stew. There is great debate on the origins of Brunswick Stew as well as who's is worth eatin'. I am not much of a recipe cook....
