a little less rare and a bit more "tender" or "sous vide-like texture"....it was about 3 inches thick which I think affected the overall outcome...it was good, but coulda been a bit "better"

Did a 5+ pound belly yesterday...in the bag with soy, lime, ginger, thai chili, coconut sugar and garlic...172.5 for about 9hrs ....served with steamed jasmine rice and stir fried veg.....best part...

Yep...preceded by a "few olives" I bet that didn't suck!...Nicely done!! Was the timing of 7.5 spot on, or more/less time, next "time"?

been using this for years to keep bacon grease in the fridge...strains out the bits...spoon out some whenever needed....empty it and start from scratch about twice a year or as needed...

Did a belated Valentine's dinner on Saturday for my wife and another couple....went with an "old School Steakhouse" menu theme...Frank Sinatra in the background....Gin martini's and bourbon for me...

34 hour chuck roast at 130...salt, pepper,garlic, rosemary and thyme...out of the bath then onto a rack to "dry" a bit while I prepped other things...re-seasoned with salt and pepper then seared in...

Nice!....Not a fan of braised/crock pot type pot roast...it's the "stringy" thing...cold weather is a great time to give this a try...thanks Dom

broke into florets and put in the Vitamix covered with water...give it a few pulses til "rice-sized"....drain and then blot to remove excess moisture....sheet pan with EVOO and seasoning into 400...

Thanks Michael...if you like fish, try it sous vide....the tuna comes out great, I've done it several times...have also done salmon with good results too...keeps the fish nice and moist

Did some ahi tuna steaks last night...110 for 30 minutes...

Post-bath/pre-sear...Thai seasoning and sesame seeds...
