Must’ve caught a roller on a bad day. Last two Mexican Hot Chocolate’s I’ve tried smoking have tunneled real bad. Cut an inch of unburnt wrapper/binder off the end only to find the filler burning....

Later this week I will be. Still eating thru the rye loaf I baked last week. Going back to 85-90% white, to the rest either whole wheat or rye.

90% white whole wheat
10% dark rye
80% hydration

Two seriously thick racks of baby backs. Just foiled with a bit of butter and shagbark hickory syrup. Will remove and sauce in about 1.5 hours.
