If I recall correctly, you do want a bit of air if you're going for aging. The oxygen left in the jar is required for aerobic fermentation, and once that is depleted the jar goes into anaerobic...

Hard to say as the smoker but it's not super synthetic like many aros. There is a prominent tobacco taste to it so I would think that translates into the room note. I'll take some to pipe club and...
