Same here. I even drilled some 1.5Ē holes in the back of the middle shelf and installed some fans to draw the air/moisture up from the bottom. But when I added the beads it really helped stabilize it.

I cooked a wagyu hangar steak last night. 5 hours @ 125, from frozen. Seared for maybe a min on each side on a scorching hot grill. Wow, so tender and flavorful.

I’m outside in my garage now, using a propane and ceramic heater to stay relatively warm. Just have to be mindful of the CO emitted by the propane.
