Here you go, the money shot. Cooked for 28 hours at 170F. Super tender. I used the Serious Eats recipe, with a few mods.

I'm contemplating putting a stave in the jar I of peppers I have going right now. It's been fermenting for 5-6 months, maybe longer. Fermentation is complete, but now it's just letting the flavors...

A little tip for getting as much out of the stuffer and into casing. After you out the meat in, add stale bread or wadded up plastic wrap. Helps push that last...
