I have the same one. I've been through 3 of those POS Mavericks. Pure garbage. The thermoworks is GREAT. And they have the wifi add on due out anytime now.

Brisket. Actually doing the hot n fast method instead of low n slow. Gotta say...I am converted. It is outstanding. The only negative is you don't get quite as pretty a smoke ring. I have some morons...

I struggled today too. Tried a new process without the foil on the ribs. They seem to start to burn before they are done. Oh well. I am gonna pull em and foil em and hope they finish out in the...

Same LLL error for me . That or the HHH error. I wish like hell that Thermoworks would develop a dual probe wireless thermometer for smokers. I'd pay $300 for it.

Lost my fire at some point last night. First time ever. Sadface. Oh well. Pulled the meat off and foiled it to fire her back up. Meat back on in 15mins.

LOVE the paper tube idea. I will be trying it this weekend. I have never had issues with the minion method, but I use lump charcoal. Not really any noxious fumes there. No chemicals. Just already...

Jamie- Whats the purpose of tying them? I have never seen this done. I like the simmering idea and may try that on the next couple.

Doing the same tonight. I call it Spatchcock chicken, though. Beer butt chicken is left far in the past once I started this method about a year ago.

It did actually come out pretty good. The picnic roast has a slightly different taste. Not better or worse, but different.

Turns out, the jerks at HEB grocery mislabeled my pork. Labeled as Pork Butt. Actually, they were Picnic Roasts. Put them on anyway. I have never done pulled pork from a Picnic Roast. I am still...
