I was also thinking about the maple sausage. I usually associate nutmeg with a sweet spicy, not a hot spicy like I make my gravy.

I like to add about a 1/2 tsp of crushed red pepper flakes, and a dash of cayenne pepper to give this recipe a little zing. I have never tried the nutmeg in it. Sounds like you like it a little...
