What is the ratio of wood to charcoal that you are using? I find that if I use too many wood chunks, I have a harder time keeping the temp stable.

I have only done spatchcock for a Turkey on the smoker. It turned out great imo. At 300 F, the 11lb bird was done in 3 hours. Probably could have pulled it before that even. I'll post some pics...
