Just put on an 8 pound brisket at 5:00AM and hope to eat it around 7:00PM today. It was a full packer brisket, but the wife cut it in half so she can cook the flat for Passover. :D

After 6 1/2 hours on the grill and 2 1/2 hours of steaming, the pastrami was fantastic.

It's going to be a turkey, but we are debating if we should spatchcock it. We haven't cooked one this way and I'm searching the Internet to figure out the cooking time at 325F. It's a 16 pounder...

The pastrami turned out really well. Need to tone down the spiciness of the rub and slice it thinner, but it was really tasty.
