I'm gonna simmer it for about 10 hours. I may be patient, but I'm not *that* patient.
Plus, I got an awesome tip of just freezing the broth and thawing/heating what I need later on.

So, I finally got the basic recipe for pho from my Vietnamese friend and today I'm going grocery shopping for the essentials. Tomorrow morning, I start making my first pot of pho.

I love myself some pho! Portland has been seeing a resurgance of trendy pho restaraunts starting up. They recently opened up a Pho Tango about a mile from my workplace and their pho is pretty good....
