I picked up two, whole, boneless pork loins on a good sale this week. I cut the ends into large roasts and the centers into thick chops.

I've got one of the roasts in a brine now and plan to smoke...

Smoked a fatty on Saturday. Fresh, hot sausage stuffed with spinach, mushrooms, onion and cheese and wrapped in bacon. Made up about a dozen jalapeno poppers on the smoker, too.

I've been wanting to try some beef ribs but at the grocery store meat counter they always look like they're all bone. Might have to stop into Von Hanson's to get a rack to test out.

Made a 12-pound packer brisket on my Weber Performer on Saturday. Smoked with maple and a little mesquite. It was my best one yet!

I smoked two, eight-pound pork butts on Friday with hickory and Plowboy's Rub. They turned out awesome. And now there's a bunch in the freezer for a "rainy day."

I never see them in the grocery store but have seen them a couple times at a Trader Joe's near me. Haven't bought one yet, but I may need to give one a try. They look awesome!

I've used their plain crust (not the herbed or wheat) a couple of times and it was good. Crispy bottom and a nice chew when we used a pizza stone in the oven at 550.
