Who's cooking what for Christmas Dinner?

For the first time in my life, my mother is allowing someone else to cook Christmas dinner. That someone is me. I am making a smoked roasted pork loin with three potato hash, roasted asparagus and apple cigar gravy. I already worked on the pork and now it's marinading in some dry rub and a little rootbeer mixed with liquid smoke

Pork - It's what's for dinner... I had a bone-in pork roast last night and eating a pancetta I brought home from Scottsdale last week. Was too much of a deal to pass up (pork roast at Stop & Shop). Cooked on WSM full blast. By the time it got to 350, it was near done. Just perfect to get a crust on the outside. We are going to steakhouse tonight and tomorrow will be pork roast left over's...

Traditional at the McKinley house...spiral ham, mashed potatoes, sweet potatoes, corn, rolls and followed up with some pumpkin pie.

Christmas, usually, we go and find a big rib roast and make that. Along with the green bean and broccoli casserole, homemade mashed potatoes, yeast rolls, and gravy. This year, we're bypassing the rib roast and doing turkey. (We didn't get turkey on Thanksgiving, we had steak at Epcot.)

This year, for Christmas Eve, we're doing the whole appetizer thing. (Also a tradition). Sausage balls, some dips, other stuff, and the south Texas staple...tamales.

Rabbit in sour sauce is a tradition in the place where I live.

Standing rib roast seared in its own fat and then baked in a nice pinot noir to make its own gravy. We'll also be making mashed taters and everyone else is responsible for other parts of the dinner.

Having everyone bring a little bit instead of one person being overwhelmed is a 30+ year tradition here.

I'm doing 2 prime ribs. One will be seasoned traditional with Johnny's seasoning, the second with Cajun seasoning.

Do you use CCs or NCs when making your gravy?
