So tried to make the Bacon Jam, it came out fairly tasty.

Though I added a little more onion and some brown sugar for flavor.

If weather prevails, I'll make some stuffed blue cheese burgers and put the spread on top.

The trick to making the Jam is using chopped Pearl Onions and slowly sauteing Red Onions with a bit of Irish butter and brown sugar.

It's not really a Jam, but a spread.
