Guinness stew
 
Guinness stew
1.75lbs chuck steak (London broil)
bottle of Guiness
14oz beef stock
3 tsps flour
3 carrots
3 medium potatoes (red or gold hold up better)
3 celery stalks
string beans (1/4 lb) if you like
8oz mushrooms
1 large onion
1 tsp chopped garlic
2 tbsps oil (olive or safflower)
1 tsp ground mustard
1 tsp dried rosemary
pinch of cayenne
2 bay leaves
salt and pepper
two tablespoons of tomato paste if you like it that way

cut meat into 1 inch chunks. Chop vegetables into 1 inch chunks and season with salt and pepper. Heat oil in large pot. Add garlic and onion. Add meat and brown on all sides. add Guinness and deglaze pot, beef stock and flour, (tomato paste) stir to combine. Add vegetables, bay leaves, mustard, rosemary, and cayenne. Cook on low heat (use diffuser if you have one) for a least two hours.

My wife's family makes a mean Guinness stew. MMmmmmm

My wife makes her own stew with stuff I don't necessarily like with beef, so the stew's on me!
