Sweet Rub
 
This rub is excellent on chicken and pork ribs and pork shoulder. Use liberally.
Due to the sugar content, it is best to smoke or cook with indirect heat.

Sweet Rub
2 cups cane sugar
1 cup BBQ spice mix (recipe below)
1/2 cup seasoned salt
1 tsp ground allspice
1/2 tsp ground ginger
1/4 tsp ground clove

BBQ Spice Mix
6 Tbsp paprika
3 Tbsp dried brown sugar
2 Tbsp dry mustard
1 & 1/2 tsp garlic powder
1 & 1/2 tsp ground celery seed
1 & 1/2 tsp sea salt
1 & 1/2 tsp ground thyme
1 & 1/2 tsp ground coriander
1 & 1/2 tsp ground marjoram
3/4 tsp cayenne

To dry brown sugar, spread out on cookie sheet and air-dry for 2-3 hours. Mix/turn every 45 min. or so. Sift before using (I don't bother with sifting.)
