I tired a few different recipes to make bacon recipe at home, so far have failed...

Is it really bacon (in that jerky) is my first question. As icehog3 noted, bacon is too fatty to be jerky. Pancetta yes, jerky no... My hunch that is not actually from the belly of pork, but somewhere else, flavored like pork and dried like jerky.

I could be way off, but that is how I'd make a similar product.

Had that once!! It was bacon "sausage" wrapped in bacon and BBQ pit for 4-5 hours. Had it at a Rib Fest in VT a couple years back. I can still taste it.

O, it was soooooo good, I actually went back for a second one knowing that I would probably never get another chance to have one.
Just remember, the slow smoking process melts the fat out so it's good for you. It's all protien after the fat melt. :r

Soo... We need to get bacon explosions back at shack (bacon wrapped in sausage wrapped in bacon, on a bun)... dont know if this is the right thread to bring that up in, but it made me think about it

Went to a "BaconFest" here near Albany NY a couple of months ago. Bacon in every form imaginable. Even bacon infused beer. Absolute heaven!
